Papa's Cajun Jambalya


Ingredients
1 1/2 cups uncooked rice
1 cup baked ham ( or chicken) diced
4 smoked country sausages, sliced
2-3 tbsp. olive oil or butter
3 large onions, chopped
1/3 cup green peppers chopped( 1 pepper)
3 cloves garlic, minced
1/2 tbsp. File powder
1 tsp. crushed red pepper
2 bay leaves
1/4 tsp. parsley
1/4 tsp. tyme
1/2 tsp. chili powder
1/2 tsp. creole seasoning
2 cloves, ground
1/2 tsp. black pepper
3 cups beef bouillon
Directions:
Heat butter or olive oil in a large heavy pan. Add the vegetables and the ham or chicken and cook over a low flame, stirring frequently. After ten minutes, add the sausages and spices. Cook for another five minutes still stirring. now add the rice and the liquid and mix well. Bring the mixture to a boil and then lower heat and cover the pot. Let simmer for about 40 minutes. during this time, stir about every 10 minutes. Cook until liquid is absorbed and rice is tender.
